2 medium ripe avocados
4 ounces 60%-70% organic dark chocolate, melted
1/2 tablespoon coconut oil
1/2 cup almond slivers or raw cashews
1 1/4 cup coconut milk
1 tablespoon vanilla extract
1/4 cup agave nectar, honey or stevia
1 pinch salt, if using
1. Melt chocolate over a double boiler or in the microwave with coconut oil.
2. Combine the rest of the ingredients in a blender. Once chocolate is melted and mixed well with coconut oil, add into blender. Purée all the ingredients until smooth and creamy.
3. Transfer chocolate pudding mixture into a container and cover. Chill before serving, approximately 1 hour. Enjoy!
