Healthy Chocolate Pudding, a new recipe created by the PreDiabetes Centers Concierge Nutrition Team.

Got a sweet tooth? Satiate your craving with our nutritious take on decadent chocolate pudding! Instead of using full-fat butter, our version stars delicious avocados (yes, avocados!), which are high in beta-sitosterol, a natural substance that may lower blood pressure and cholesterol. Hypertension and abnormal cholesterol often occur alongside diabetes, making this a key health benefit for people with prediabetes and diabetes.

This dessert also features heart-healthy coconut oil and coconut milk, and is deliciously sweetened with agave nectar, which can help prevent the unhealthful blood sugar spikes associated with other types of sugar.

One of the best health benefits of this dish is that it has no cholesterol, thanks to the omission of butter and eggs. Our pudding contains omega-3 and omega-6 fats, instead of unhealthy animal fats. Serves 6

2 medium ripe avocados
4 ounces 60%-70% organic dark chocolate, melted
1/2 tablespoon coconut oil
1/2 cup almond slivers or raw cashews
1 1/4 cup coconut milk
1 tablespoon vanilla extract
1/4 cup agave nectar, honey or stevia
1 pinch salt, if using

1. Melt chocolate over a double boiler or in the microwave with coconut oil.

2. Combine the rest of the ingredients in a blender. Once chocolate is melted and mixed well with coconut oil, add into blender. Purée all the ingredients until smooth and creamy.

3. Transfer chocolate pudding mixture into a container and cover. Chill before serving, approximately 1 hour. Enjoy!
